In this 3.5 hours course you will learn how to cook failsafe sushi rice, basic vegetables and fish preparation, before moving on to the sushi making. You will learn how to roll maki rolls, inside out California roll, before making your own salmon and tuna nigiri.

Silla will demo how to cut sashimi and make some fancy Dragon and Futomaki rolls with great samples to taste.

The sushi made on the course will create a delicious meal you will sit down and eat together as a class.

Silla Bjerrum

Silla is a sushi chef and sushi educator of 3 decades in London. Originally trained in Chelsea at boutique sushi bar Nippon Tuk and went onto co-found UKs first sushi delivery service Feng Sushi with 10 sites across London. Since exiting in 2015 Silla has worked in the sushi industry in senior management roles, business development and product development for Genji in Wholefoods Market, Sushi Gourmet, Sushi Daily and most recently Eat Happy across Europe.

Silla has published 2 cookbooks on Japanese cooking and have in the past taught here at Divertimenti, Leiths, Borough Kitchen and Billingsgate Seafood Training School. Sillas teaching style is hand on and engaging with lots of tips on how to source and create top quality sushi at home.

Silla is appreciated in the sushi industry for her commitment to teach, product development and sustainability and has won numerous industry prices for her work. Currently Silla works as a Sushi Consultant and run SushiSTRE in WestLondon.
