Description
Learn to make your own authentic ramen from scratch, including hand-made noodles, based on three styles from Hokkaido, Japans northernmost island. This class will cover traditional miso, shyu, and curry ramen with guidance on how to make every element of proper ramen: broth, noodles, seasoning, aroma oil and toppings. Samples of each style of ramen will be provided and there will be an opportunity to have all of your ramen questions answered.

Tim Anderson
Since winning MasterChef in 2011, Tim has carved out an impressive career in food working as an author and chef to become one of the most prominent voices on Japanese food in the UK.
Tim is an experienced presenter and broadcaster, with a regular seat on BBC R4s Kitchen Cabinet panel alongside Jay Rayner, discussing and debating the food news of the day. He also contributes to titles including Nat Geo Food, Guardian Feast, and the olive magazine podcast.
He has written eight cookbooks, with his ninth all about the food of Hokkaido to be published later this year (autumn 2024) and hosts regular events at venues including The Bertinet Kitchen and Toppings Bookshop in Bath.
Born and raised in Wisconsin, Tim has been a student of Japanese food for more than two decades. After studying Japanese food history at university in LA, he moved to Fukuoka Prefecture to immerse himself in the local culture.
