They call Valentina the ‘Risotto Queen’ because there really is very little she doesn’t know about Italy’s famous rice dish! Risotto was the first thing she learned to make as a child and she is really passionate about this remarkable dish – as various books she has written on the subject prove! “For me,” she says, “this is absolutely the sex pot of the Italian menu – nothing is more sensual and seductive than a properly made risotto!”
In this hands-on class, you will have the opportunity to choose from a list of 4 seasonal risotti to cook from scratch with a cooking buddy in teams of 2. These will include:

  • Risotto with Gorgonzola
  • Risotto with Beetroot
  • Risotto with Scallops
  • Sardinian Saffron Risotto

The finished dishes will then be tasted and judged by Valentina and the Divertimenti team in terms of their appearance, texture and flavour.
You will also learn to make 2 different kinds of Arancini using risotto that Valentina will make ahead for you – these will include:

  • Arancini with Mozzarella, Tomato and Basil: alla Caprese
  • Arancini with Peas, Ham and Mushroom

You will come away feeling confident to master these classic Italian dishes at home.

Valentina Harrisis a passionate Italian cook and award-winning author with more than 50 books to her name, including:The Italian Regional Cookbook; Risotto! Risotto!; Classic Recipes of Tuscany; 500 Italian Recipes;Valentina Harriss Complete Italian Cookery Course.Valentina is the youngest member of a large Anglo-Italian family of gourmets. Educated in Italy, Valentina brought her qualifications for teaching and cooking from Rome to London in 1976.

She is an experienced teacher and food writer passionate about sharing her food philosophy, techniques, stories, and experiences both with food and its intricate history, plus solid and unique kitchen techniques. As a regular face at food festivals in the UK, Valentina still finds time to share her expertise and love of Italian food by hosting cookery courses, and can be found regularly contributing to radio, TV, newspapers, and magazines.
