Ask any professional chef and they’ll tell you that knowing how to use a knife is the most important skill in the kitchen. From keeping knives razor sharp to learning how to joint poultry and create all the vegetable cuts like a professional chef alongside all aspects of knife skills & knife care are covered in the comprehensive & essential class.
You will be led by a Divertimenti chef in how to handle, look after & use your kitchen knives, after your class you will sit down to enjoy a meal prepared by our chef together as a class with a glass of wine & refreshments.
Great knife skills lead to beautiful presentation of your final dishes and helping in all aspects of your cooking.
Whats covered in the class:
- How to sharpen and care for your knives
- Vegetable cutting techniques including slicing, julienne, batons, dicing, mirepoix, brunoise
- Joint a whole chicken, make a stock from the bones, reserve the breast to make a Vietnamese pho, the thighs and drumsticks will get oven baked in a marinade all while making a slaw with the veggies and a tropical fruit salad with the fruits
- Tips on food plating and presentation
You will cover a three course menu in the session featuring a Vietnamese style pho broth, Sticky roast chicken with sesame & a colourful raw Asian slaw & a beautifully plated exotic fruit salad
